Roasted or Grilled Salmon

Without a doubt the hottest topic of concern l hear from our customers is that of Gluten. So how can we achieve a tantalizing crust without bread crumbs of one sort or another? Here is how. This will work very will work very nicely for fish as well.

Ingredients

  • 500ml Arborio Superfino Rice
  • 100ml Extra Virgin Olive Oil
  • 1/2 bunch of fresh Thyme, stripped
  • 250ml Italian Parsley Leaves
  • 1 Clove of minced fresh Garlic
  • 1 Lemon, zested on a microplane/wrasp
  • Salt and Pepper to taste
  • 4 Chicken breasts, bone off & skin on,
    with the first wing bone left on and cleaned down

Preparation

Heat extra virgin olive oil until hot but not smoking.

Add rice to the pan and stir well over a moderate heat to lightly toast the grains. Once the rice is lightly toasted add the garlic and herbs and cook for an additional minute.

Season to taste and place in a food processor.

Add lemon zest and run the machine until the mixture feels like sand.

Lightly oil, season and sear the chicken breasts, then crust the surface. Finish in the oven at 350 to desired doneness.

Allow to rest for 5 minutes and enjoy!
